Leafy Waldorf Salad is a sweet and refreshing salad that makes an excellent light lunch or side salad. The Creamy Honey Dressing is well balanced with creamy yogurt, sweet honey and acidic lemon juice with an olive oil base. The salad is topped with tart Macintosh apples and crunchy celery, juicy grapes and toasted pecans. Growing up I loved Waldorf salad so I was really excited to create this healthy mayo free version.
Health Benefits of Celery
Celery is a crunchy green veggie that has a tart, tangy, watery flavor. Celery, along with leafy greens, apples and grapes, is on the dirty dozen list therefore you should try and buy organic celery if possible. Celery has a lot of health benefits including protecting the digestive tract against inflammation. Celery contains a diverse array of antioxidants that protect our cells and blood vessels from oxidative damage. It is high in vitamin K which supports bone health and blood clotting. Celery is also a good source of fiber, potassium and folic acid (vitamin B9) which regulates the formation of both red and white blood cells. Folic Acid is also very important during pregnancy because it regulates the development of the baby’s central nervous system.
Leafy Waldorf Salad really easy to make and can be prepared in under 15 minutes.
The Creamy Honey Dressing can be made by whisking the ¼ cup olive oil, 1 Tbsp plain yogurt, ½ Tbsp honey, 1 Tbsp lemon juice and salt and pepper in a bowl or by shaking it in a jar.
Right before serving the Leafy Waldorf Salad, toss the lettuce with the Creamy Honey Dressing then transfer it into the serving bowl. I like to toss the lettuce in the dressing before adding the apples, celery, grapes and pecans because the salad looks much prettier when the topping are on top and not at the bottom of the salad bowl.
Leafy Waldorf Salad
Prep time: 15min
Serving size: 2 large salads or 4 side salads
Leafy Waldorf Salad Ingredients:
- 10 cups of mixed organic leafy greens (5oz box)
- Two organic Macintosh apples, diced
- Four stalks for organic celery, diced
- 2 cups of organic grapes, halved
- 1 cup of toasted pecans
Creamy Honey Dressing:
- 1/4 cup olive oil
- 1 Tbsp plain yogurt
- 1/2 Tbsp honey
- 2 Tbsp lemon juice
- Salt and pepper to taste
- Whisk or shake Creamy Honey Dressing ingredients together in a small bowl or jar and set aside.
- Place lettuce in a large bowl and toss with dressing.
- Top with the diced apples, celery, grapes and toasted pecans and serve.
